How Long Does Sourdough Bread Last? Work Out Your Own Number
A cut sourdough loaf kept on the counter in paper stays pleasant to eat for about two to three days and is usually still safe for several more; in published storage trials the first visible mold has appeared anywhere between day 4 and day 12. Sliced bread in sealed bags at room temperature molded on day 4 in a 2025 trial by Mou and colleagues in Foods, while the same bread made with a screened antifungal sourdough culture held to day 12. Staling changes texture and is a quality decision; mold changes the safety decision, and once mold is visible the US Department of Agriculture's advice for bread is to discard the loaf rather than cut the spot away. Which day your loaf lands on depends on four things you can check: room temperature, room humidity, whether the loaf is cut, and what it is wrapped in.
Stale and moldy are two different problems
Staling is starch reorganising. Amylopectin recrystallises after baking and water migrates from crumb to crust and out of the loaf, which is why a two-day-old loaf feels dense.
The rates are measurable. Chen and colleagues, in Current Research in Food Science in 2021, stored wheat loaves in paper bags at 23 °C and 65 percent relative humidity. Their fresh loaves carried roughly 46 percent moisture in the crumb on day 1. By day 4 the untreated loaves had lost 12.5 ± 1.2 percent of their weight; by day 14, 29.7 ± 1.0 percent, with crumb firmness past 616 N, the upper limit of the texture analyser measuring it.
Firming starts earlier than most people assume. Bartkiene and colleagues, in Frontiers in Nutrition in 2023, measured control wheat bread at 22 ± 2 °C: crumb hardness near 0.500 mJ at twelve hours, still there at twenty-four, and about 1.4 times the twelve-hour value by forty-eight. That is a rise of roughly 40 percent over a stretch in which nobody would call the bread spoiled.
None of that is a safety measurement. Firmness tracks quality. Mold tracks whether you eat it.
What sourdough changes, and what it does not
The four-to-five-day rule treats acidity as a preservative with a fixed term, and that is where it breaks. Fermentation shifts the loaf's ecology; it does not issue a calendar.
Mou and colleagues make the size of the shift clear because they changed one variable. Rye-bran breads were sliced to 12 mm, sealed in bags, checked daily at room temperature. The control molded on day 4; the loaf made with Lactiplantibacillus plantarum G8, a strain screened for antifungal activity, held to day 12. That fermentation also softened the crumb, to 530.91 g against the control's 700.97 g, a reduction of 32.03 percent measured on the day of baking.
The eight-day gain came from one strain selected out of a screen, not from sourness as a general property. A starter you keep at home is a different microbial population, never tested against a mold challenge. Bianchi's PDO Tuscan loaf, a genuine long-fermented sourdough, molded by day 8 in plastic at 23 °C.
The strongest argument against me is worth stating plainly: rules of thumb exist because almost nobody will run an experiment on their own bread, and a conservative four-day rule prevents more waste than a method nobody uses. I grant it. My objection is that this rule fails in both directions. In a cool, dry kitchen it bins good bread on day 5; in a warm, humid one it waves through a loaf growing something since day 3.
Cutting the loaf starts the faster clock
The crust is the loaf's own packaging, and Chen's team proved it by improving on it. A candelilla wax coating cut fourteen-day weight loss from about 30 percent to 13 percent and held crumb firmness at 34 N where the untreated loaf ran past 616 N. You are not going to wax your bread. The finding still tells you what matters: nearly all the water leaves through the crust, and a cut face is a hole in it.
Behind that face sits crumb at roughly 46 percent moisture, now open to the room. An uncut loaf routinely holds condition four to five days on the counter. Cut it and the useful window contracts to two or three.
So buy the size you will finish, cut one sitting's worth at a time, and stand the loaf on its cut face, which reseals the opening better than any bag.
Counter, fridge, or freezer
Cold slows mold and accelerates firming, so the right answer depends on what the rest of the loaf is for.

Inokuma and colleagues, in the Journal of Agricultural and Food Chemistry in 2021, measured crumb firming after two days at 20 °C and at 7 °C, the counter and the fridge in most homes. Their subject was a wheat genotype bred for slow staling, so this is mechanism rather than a consumer expiry rule, though the design shows firming is temperature-sensitive enough that food scientists test both.
Until about 2018 I repeated the never-refrigerate line. I stopped when I began separating the two clocks in the consumption data instead of treating spoilage as one event. A household that refrigerates a large loaf gets worse bread and fewer discarded loaves. If the remaining slices are heading for a toaster, that is a good trade, and the texture penalty is close to invisible.
Slice before freezing, on the day of baking, and toast straight from frozen. Freezing a whole loaf forces you to thaw a whole loaf, which is how good bread becomes waste.
Humidity is the variable nobody measures
The USDA is blunt about it: mold growth "is encouraged by warm and humid conditions," and its household advice for limiting mold is to keep indoor humidity below 40 percent. Very few kitchens are near that. Chen's loaves sat at 65 percent, an ordinary indoor level, and still lost 12.5 percent of their weight in four days. Both clocks ran the whole time.
Sealed packaging moves the problem rather than solving it. Bianchi's team noted that because their plastic allowed no evaporation, water leaving the crumb raised the humidity inside the bag and gave mold more opportunity. That is the mechanism behind every loaf that went soft and spotted in a bread bag while a paper-wrapped one merely went hard.
I learned this expensively. Twice I bagged a loaf in plastic while it was still warm, and both times found mold on day 3. The cost was not the bread. It was noticing that my own household record for that week said one loaf consumed, when a third of it had gone in the bin. That is exactly the failure my national series carries: a diary records what enters a kitchen and is nearly blind to what leaves it uneaten.
Here is what I cannot vouch for. I compile Danish figures, in a cool country, and I have no measurements of my own from a kitchen sitting at 30 °C and 80 percent humidity through a summer. Readers there tell me three days is optimistic, and the trials give me no reason to doubt them. What I can vouch for is the shape of the relationship: same loaf, same wrapping, more humidity, fewer days.
A hygrometer costs about what two loaves cost, and it is the one instrument that turns a rule of thumb into your number.
Why a packaged sandwich loaf outlasts your sourdough
Prepacked sliced bread may contain propionic acid and its salts, E 280 to E 283, at up to 3,000 mg/kg expressed as propionic acid under Annex II of Regulation (EC) No 1333/2008. That is a fungistat, added to hold mold off, and the loaf is sealed at a plant with a lower airborne spore load than any home kitchen.
Your sourdough has none of it. It cooled in ordinary air, you wrapped it, and its only defence is the acidity of its own fermentation. Mou's trial is the cleanest read on what that gap is worth: same bread, same bags, same room, day 4 against day 12.
The date printed on that loaf is also a different kind of object: a manufacturer's quality date for a preserved product in known packaging, and no measurement of your kitchen.
When mold appears, the decision is already made
The USDA's chart in Molds on Food: Are They Dangerous? lists bread and baked goods under "Discard," and gives one reason: "Porous foods can be contaminated below the surface." The agency describes mold as having "branches and roots that are like very thin threads," which "may be difficult to see when the mold is growing on food and may be very deep in the food." Moldy foods, it adds, "may also have invisible bacteria growing along with the mold."
The one-inch trimming rule people half-remember is real, and it applies to hard cheese and firm fruits and vegetables, because mold cannot easily penetrate dense, low-moisture foods. A sourdough crumb near 46 percent water, built of connected air pockets, is the opposite material. The visible spot is the fruiting body of something already distributed further than you can see.
Do not sniff it; the USDA warns this can cause respiratory trouble. Bag the loaf, bin it covered, and clean the box it sat in.
How to revive a stale loaf that has no mold
- Inspect the whole loaf in good light, including the cut face and the base. Any fuzz, discoloured patch or musty smell and the loaf is finished.
- Wet the crust briefly under a cold tap, or wipe it with a wet hand.
- Heat at 180 to 200 °C for 8 to 12 minutes for a whole loaf, 4 to 5 for a large piece.
- Cool for ten minutes before cutting, so the interior moisture redistributes.
- Eat it within a few hours. Heat melts the starch crystals, and they reform faster the second time.
Plenty of stale bread needs no reviving. Toast, croutons, panzanella, breadcrumbs and French toast work better with bread that has firmed.
Working out your own number
My series says Danish butter consumption is falling, and it also says almost nobody eats cake. The first is true. The second is what people write down. A national median describes a population honestly and a household poorly, and a published four-day sourdough figure is the same kind of object.
So measure. Put a thermometer and a hygrometer where the bread lives and read them daily for a week. For your next three loaves, record the date baked, whether it went in cut or whole, what it was wrapped in, and the day you first saw a spot. Three loaves gives you a working figure, more accurate for your kitchen than any number in this article, including the ones I have cited. Redo it when the seasons turn, because the humidity reading is what moves.
